For this reason, in composing of our menus we never forget to include
carefully selected by Slow Food principals, or products from small Italian
manufacturers of culinary excellence in danger of disappearing, along with
numerous DOP and IGP (protected and specialty regional varieties)
Periodically, menus will feature, always in agreement with the customer,
typical traditional foods, DOP, OGP and specialty products from certified AIAB
and Coldiretti selections.
